
CUSTOM BEEF PROCESS

Scheduling
When we have an entire animal sold, we will schedule a processing date and inform you of that date. Feel free to contact us before you send in a deposit and we can give you an estimate of the next open date.
Specifying Cut Order
After we receive your deposit, we will send you a form to specify how you want your beef cut. You will also have the option to work directly with the processor. The processor will charge a handling fee per quarter and a cost per pound of "hanging weight" or “carcass weight” to process and cut the meat (“hanging weight” is typically 50% to 60% of the “live weight.”) This amount will be due directly to the processor.


Processing Date
When the processing date arrives, we will weigh your cow on our scales and then haul it to the processor. We will send you an invoice for the remaining amount due based on your portion of the “live weight” of the cow. We also charge a hauling fee per quarter from our farm to the processor. We will need to receive your payment before we authorize the processor to release your beef to you.
Pick Up
Once the beef has been cut, vacuum sealed and frozen, you will be notified that it is ready and you will be able to pick it up at the processor's facility. Payment will need to be made to the butcher for processing when you pick your beef up.
